The fact that there are a growing estimate of organic and natural food grocery stores occasion around the globe, and the fact that large chains, such as Whole Foods, are doing so well despite the hard times our economy has faced over the last 3 years, is proof (at least to me) that we, as a people, Want great foods and are willing to pay a small extra for healthier choices.

Not only are organic and natural food stores occasion left and right, but major grocery store chains such as Kroger, Publix, Food Lion, Lowe's, and even Wal-Mart Supercenters are jumping on the band wagon, offering more natural and organic brands of food and even manufacturing their own store brand versions.
In addition to an increase in the purchasing of healthier foods, there has also been a steady rise in the buy of healthier for the environment, "green" products, such as non-toxic and all natural cleaning supplies, recycled paper and plastic products, re-usable containers, etc.
The theorize I point out all of these facts is to make it clear that we, as a people, have "wised-up". We are no longer okay with being hand-fed the crap that the government tells us is good for us. Sufficient study has been done, Sufficient independent studies from scientists Not in the pocket of the government and Big Ag, to furnish us with evidence that for decades, our government has been willingly killing us straight through food.
Despite the fact that we are all struggling financially right now, despite the fact that some of us are having trouble retention a roof over our heads, gas in our vehicle, or food in our bellies, we are making sure that the food we Are putting in our bellies is great for us. Our eyes have been opened and our brains have begun working independently once again. We understand the concept "Yes, it may cost more, but it's great for me and the long term benefits are worth the extra cost."
We are also beginning to understand that the population operate the market, not the other way around. If we want great foods, if we request great foods, then the market must give us what we want.
Clearly, as seen by the growing sales of natural and organic foods, we are demanding great for ourselves and our loved ones. I can only hope that this determined trend will continue to grow and move forward. One day, maybe, just maybe, all foods will be natural. After all, isn't that what food is supposed to be anyways?
